Miso Ramen Noodles

Hi! One ingredient that always goes over incredibly well in my house are ramen noodles—but, I can’t just eat ramen noodles all day so I found this brand that I love! Made from brown rice and millet. The other night I made a version of our favorite noodle dish with miso, farmer’s market veggies, miso paste, and tofu. Here’s the play-by-play:

1. Chop 1 block of firm tofu into small 1-inch cubes. Add vegetable oil to a pan and sear on each side for 5-6 minutes. Do not flip until they get brown!

2. While cooking the tofu, boil water and pour over noodles. I used 2 pads of noodles for 4 servings in this recipe.

3. Remove tofu from the pan and add chopped veggies. Add 1/4 cup of water to help them steam while they cook.

4. Add chopped carrots.

5. Add 2 tablespoons of miso paste. Mix with liquid in the miso in the pan until to help it dissolve.

6. Add in cooked noodles.

7. Add in crispy tofu.

8. Add in a 1/4 cup chopped herbs (cilantro, basil, mint), 2 tablespoons of liquid aminos, and 1 tsp sesame oil. Mix it all together and serve!

This dish is so versatile and you can make it with any vegetable you have. Test your creativity at the farmer’s market or clean out the vegetables in your freezer!

  • 2.5 cups of vegetables
  • 2 tablespoons of miso paste
  • 2 tablespoons aminos or soy sauce
  • 1 teaspoon of sesame oil
  • 1/4 cup fresh herbs (I used cilantro, basil, and mint)
